THE 1921 BARRELS

In addition to the excellent quality of our blanco Tequila, the flavor of our Reposado and Reserva Especial Añejo Tequilas are a result of the resting period in White American Oak barrels, bearing a medium char.

The production process of White Oak Barrels begins with the selection of the highest quality seeds that are sowed into the rocky grounds of the forests of North America. Careful attention is given to the growing cycle of the Oak, selecting the highest quality harvest, and then waiting on the growth to the appropriate size. The slowest growing Oaks are then used for making the barrels.

Premium White Oak is used to meet the needs of porosity, durability, resistance, weight, and character, all necessary in giving our Tequila its characteristic flavors.

The barrels must withstand a delicate charring process, insuring body and an accentuated flavor in the Tequila; the personality and flavors that the barrel disperses to the spirit is dependent on the char.

The charring process of our barrels is known as “Barrel Profiling”, which consists of utilizing a computerized temperature sensor system and touch screen monitors. The system is programmed to increase, decrease, or maintain the desired temperature for each barrel. There are 5 charring stations in each row of barrels, and each touch screen controls two rows. The char of each barrel is based on the information input into a computer, which ascertains the exact temperature degree, giving the 1921 barrels the perfect profile for storing and enabling an exquisite flavor and essence to our Tequila.
